Bring this fall favorite to life this holiday season — It’s Moringa Sweet Potato Pie!

Ingredients 

Pastry Dough – Single Crust

– 1 ½ cups unbleached all purpose flour (less because of Moringa powder)          
– ½ Tbsp Pure Moringa Powder
– ¼ tsp sea salt
– ½ cup (1 stick) cold Spectrum brand non-hydrogenated shortening
– ¼ cup ice water
-1/4 tsp of apple cider vinegar

 

Pie Filling

– 4 to 5 medium sweet potatoes (2 ¼ cups cooked and mashed)
– 1 cup of almond or rice milk
– ½ Tbsp Pure Moringa Powder
– ½ cup cane or raw sugar
– 1/4 cup light brown sugar
– 2 tsp of Ener-G Foods brand egg replacer

-2 Tbsp of unbleached flour
– 6 Tbsp of Earth’s Balance brand butter
– ½ tsp of ground nutmeg
– ½ tsp of raw lemon juice
– 1 tsp pure vanilla extract
– ¼ tsp of sea salt

Directions

-In a medium mixing bowl, stir together flour, sea salt, Moringa and stir together until evenly distributed.

-Next add shortening and toss until forming and mix it until it looks like pea-size pellets.

-Next add a tablespoon of ice water to moisten the flour mix.  Then continue to add water, 1 tablespoon at a time until the mixture is moistened.

–Next use hands to knead the dough until it forms a ball.  Then set inside refrigerator with plastic wrap cover.

– On lightly floured surface, flatten dough with hands and roll out into a circular fashion from center to edge and roll until you have a couple of inches bigger than your 9 inch pan.

-Transfer crust to pie pan.  Take edge of pie crust and create edge by pinching triangle with your fingers.

Pie Filling

Preheat the oven to 400 degrees Fahrenheit.

–Put mashed sweet potatoes, nutmeg, almond milk, Moringa powder, lemon, vanilla, sea salt, butter, flour, egg-replacer, cane & brown sugar in a bowl and blend with hand mixer until smooth.

–Pour pie filling in crust and bake 45 min until crust is golden brown at 400 degrees.
